Glucose is a pure carbohydrate made from corn starch or potato starch . It has a sweetening power lower than the sugar and a relatively viscous texture and is in the form of a thick , colorless syrup . In pastry, it is used to prevent the crystallization of sugar, boiled sweets , caramels , fruit jellies , gums and marshmallows. It also prevents drying of the marzipan and candied fruit .
